If you know me, you know that I LOVE eggs! I love them for a few reasons... #1- They are a good source of protein and I love protein. #2- They are so fast and easy and for someone like me - who owns 3 businesses - that's exactly what I need! #3- They taste good!
I think my love for eggs began as a child. I remember helping my dad cook bacon and eggs. He always made them scrambled with a little milk. If you've never had eggs...well then, I'd start with scrambled and then work your way up to more creative pairings. I also enjoy oatmeal on occasion. This morning I knew we were low on groceries and really needed to go shopping...but it was too early, and I just wanted to make something we already had. So I grabbed some oatmeal, eggs and a few other ingredients and threw together this dish on the side! I hope you enjoy!
This morning I woke up and knew I didn't have my usual Quest protein bars and we were all out of Raisin Bran. So I searched the cupboard and found a container of Quaker Oats. I wasn't in the mood for anything sweet, so I decided...hmmm what about a savory option. I thought immediately I'd pair some oatmeal with some eggs!
One of my favorite oils is Coconut Oil- it is a lighter oil and has a lot of really healthy fats. I use it to cook and I always add about a teaspoon into my first cup of coffee in the morning. If you've never had Coconut Oil in your coffee, well you are missing out! One of these days I'll write a whole blog dedicated to Coconut Oil. You can really use any oil to base your pan for this recipe if you don't have Coconut Oil.
You will need a little minced garlic...and as you can see I am lazy so I like buying mine ready to use! Fresh Garlic or ready to use, you only need a teaspoon.
For your dairy products you'll need 1 Cup of 2% Milk, one fresh egg and about 1/4 cup of Feta Cheese. (Sprinkled on top you can add chives if you want.) Grab your salt and pepper and cooking pans and let's begin!
I make my oatmeal according to the directions. Boil 1 cup of milk and then add 1/2 cup of oats and a pinch of salt and simmer for about 5 minutes. Before I begin I add about 1 Tablespoon of Coconut oil to coat my saucepan. To make this dish extra savory we will also add...
1 tsp of minced garlic and...
1/4 Cup of Crumbled Feta Cheese!
Let that all simmer uncovered for 5 minutes. Remember to stir occasionally!
While the oatmeal cooks, you can begin on your eggs. Again, I start with about 1 tablespoon of coconut oil to coat my pan.
Cook your egg sunny side up (yolks runny) on a low/medium heat for about 2-3 minutes.
Place the egg on top of the cooked oatmeal, so when you cut into it the yolks run out.
Sprinkle on some extra toppings: Chives, Additional Feta Cheese and Salt and Pepper to taste.

Savory Oatmeal Sunny Side Up!
Serves: 1
Prep Time: 1-2 Minutes
Cook Time: 7 Minutes
Ingredients for Oatmeal:
1 Tablespoons Coconut Oil
1 Cup 2% Milk
1/2 Cup Quaker Oats
1/4 Cup Feta Cheese
1 tsp Minced Garlic
Pinch of Salt
Ingredients for Egg:
1 Tablespoon Coconut Oil
1 Medium/Large Egg
Directions for Oatmeal:
Set Stove on High
Step 1: Coat Small Saucepan with 1 Tablespoon of Coconut Oil
Step 2: Once Saucepan is heated (you can tell when the oil dances easily across the pan) Add 1 Cup of 2% Milk. Bring to a boil
Step 3: Reduce heat to Low/Medium (about 4-5 on my stovetop)
Step 4: Stir in 1/2 Cup of Quaker Oats and a Pinch of salt, minced garlic and crumbled Feta.
Step 5: Let it simmer 5 minutes uncovered
Directions for Egg:
Set Stove on Medium/Low heat (about 4-5 on my stovetop)
Step 1: In a separate pan: Coat pan with 1 Tablespoon of Coconut Oil
Step 2: Once Saucepan is heated (you can tell when the oil dances easily across the pan) add 1 whole egg
Step 3: Cook for 1-2 minutes
Finish Up:
Step 1: Place cooked oatmeal in a bowl
Step 2: Place Egg on Top
Step 3: Top with a sprinkling of chives, feta and salt and pepper to taste!
